Cooking Demo: Stir-Fry Chicken

I recently created a cooking video featuring some spices to pair with my last blog entry, "Spices of Life". I demonstrated a zesty chicken stir-fry dish with fresh ginger and poultry seasoning combined with two umami flavors: soy sauce and mushrooms. My Mom and her friend created this recipe for their families and friends. I remember making it as a kid!

This is the first time that I've ever recorded a cooking demo, and I had a lot of fun doing it; keep an eye out for more videos in the future as I get better at recording my cooking demos. Stir-fry chicken and pea pods


2 tbsp low-sodium soy sauce

2 tbsp cooking sherry or dry white wine (Optional) 1 tbsp. fresh or 1 tsp. dry ginger 1 clove garlic or ¼ tsp. garlic powder ½ tsp poultry seasoning 1 tsp lemon pepper ½ tsp salt

3 large chicken breasts (or 1 pound) - chopped into bite sized pieces 4 diced green onions 1 cup fresh button mushrooms sliced

2 cups fresh or 1 pkg frozen pea pods 1-2 tbsp. oil for stir frying (I use avocado or sesame)

Blend together the soy sauce, ginger, wine, garlic, poultry seasoning, lemon pepper, and salt in a bowl. Mix in chicken pieces and marinate for 30 minutes. Next put the oil in a hot skillet or wok and add the chicken with marinade. Saute for 5-10 minutes until the chicken is done. Ad pea pods, cook and then add the green onions and mushrooms. Stir fry the vegetables until they are tender-crisp (4 minutes or less).

This recipe is flexible, you can add the vegetables you like to increase your enjoyment.


Serve with white or brown rice.

I love the mix of spices and herbs in the chicken recipe and can't wait to try it. Sounds like a super easy work night dish.
